How to make it

  • In a small bowl, combine the honey, mustard and mayonnaise. Spread evenly on the tortillas. Top each with two slices bacon, two lettuce leaves and two slices of tomato. Drizzle olive oil over the tomatoes and season with salt and pepper to taste (I skipped this part - figured the mayonnaise was enough!). Fold one edge of a tortilla over the filling, roll up tightly and put them seam side down on a cutting board. Cut as desired and secure with wooden picks, if needed.

    After a busy day, these made a quick dinner. I halved the recipe for just the two of us, and two wraps for my husband and one for me were surprisingly filling! I was lucky enough to find some meaty thick bacon and cut off the fatty "tails" before frying to limit the calories; used Flatout, a thin tortilla-like flatbread that comes in a mutigrain version for fewer carbohydrates; used mixed greens that included spinach from the grocery store salad bar to get in a little bit of a vegetable; and used halved and quartered grape tomatoes. Mixing the sauce together in the morning and letting it sit in the refrigerator all day let the flavor develop. I spread only enough on each wrap to taste and didn't need all of it. Like Frankieanne, the recipe submitter, I didn't use the olive oil or salt and pepper, finding the sauce was enough for us, too. Thank you for "saving my bacon" for tonight's dinner, Frankieanne.
