Ingredients

1/4 to 1/3 lb Bacon

1/2 c Bacon Drippings

1 Egg

1 c Milk

1 c Shredded Cheese

2 c Flour

1 tsp salt

1/4 c Sugar

3 tsp Baking Powder

Directions

Preheat oven to 400.

Beat egg.

Stir in milk, Bacon drippings, and cheese. Set aside.

Sift together: flour, salt, sugar, baking powder.

Stir into egg mixture.

Crumble up bacon and add to the mix.

Spoon into greased muffin tins.

Bake 18 to 20 minutes.

These are what I aspire my biscuits to. Soft firm shell. Breadlike crumb in the center. It's not flaky or crumbly.

Probably am going to do some merging to produce a great biscuit.

I cut the bacon grease into the flour mix like I would for biscuits, after the bacon grease spent some hard time in the freezer.
