Joy in the Morning Muffins

- 1 cup dark brown sugar shopping list
- 1½ cup oat bran shopping list
- 1½ cup oat flour (or whole wheat) shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons baking soda shopping list
- ½ teaspoon salt shopping list
- 1 tablespoon cinnamon shopping list
- 2 eggs shopping list
- 1 tablespoon vanilla shopping list
- ¼ cup vegetable oil shopping list
- 1 cup applesauce shopping list
- Small can crushed pineapple, drained shopping list
- 1 cup grated carrots and/or zucchini shopping list
- ½ cup grated coconut shopping list
- ½ cup raisins, dried cranberries or other berries shopping list
- ½ cup chopped pecans (optional) shopping list
How to make it
- Preheat oven to 400 degrees (F)
- Combine all the dry ingredients in a large bowl.
- Add eggs, vanilla, oil, applesauce, pineapple, carrots/zucchini and coconut and mix with a spoon until everything is moistened.
- Add remaining ingredients and spoon into muffin pans.
- Bake at 15-20 minutes
