How to make it

  • Preheat oven to 350 degrees .
  • Grease and flour a bundt pan or use baking spray which I recommend
  • Sift together the flour , baking powder and baking soda
  • In a large bowl, cream together the avocado and sugar.
  • Beat in the eggs, vanilla, lime juice, sour cream, lime zest and coconut if using
  • Beat into the flour mixture, just to blend well.
  • Pour batter into prepared pan.
  • Bake for 1 hour center rack OR until wooden pick inserted in center comes out clean.
  • Place pan on cooling rack
  • Cool cake to warm
  • Mix glaze ingredients and pour over warm cake till absorbed and cooled
  • Carefully remove cake to serving plate.
  • Note: optional: you may want to add a drop or two of food grade food color if the avocado mixture appears more yellow than green.
  • Key lime juice is more of a yellow than a green
