How to make it

  • Combine yeast with water and a lil drizzle of olive oil. Set aside about 10 minutes or so, until frothy.
  • Add 1 cup of flour, honey salt and pepper and begin to mix.
  • Gradually add remaining flour until a nice dough ball forms and dough is pulling away from side of bowl.(I use my KA with the dough hook)
  • Knead about 5 minutes.
  • Remove dough from pan and lightly brush inside of pan with oil.
  • Add dough back and turn it a few times to coat lightly with the olive oil.
  • Cover loosely and let rise in a dry, warm place for about an hour until dough doubles in size.
  • Punch dough down, remove from bowl and press into 9 inch case iron pans or shape into flat rectangle or square loaves free standing or in other pans.
  • Combine olive oil and melted butter.
  • Press jalapenos into the dough then brush, again, with some of the olive oil and butter mixture. Reserve some of the oil/butter
  • Sprinkle with shredded cheese.
  • Cover loosely and let rise, again, another hour
  • Bake at 425 for about 24 minutes until cheese is melted and crust of bread is golden brown.
  • Brush with remaining oil/butter just out of oven.
