ITALIAN ZUCCHINI QUICHE Recipe
Quick & easy Italian zucchini quiche (pie) suitable for breakfast, brunch, lunch or any meal.

Ingredients
  • 4 cups thinly sliced zucchini
  • 1 cup chopped onion
  • ¼ to ½ cup margarine
  • ½ cup chopped parsley or 2 T. dried flakes
  • ½ t. salt
  • ½ t. pepper
  • ¼ t. garlic powder
  • ¼ t. basil
  • ¼ t. oregano leaves
  • 2 beaten eggs
  • 8 oz. (2 cups) shredded mozzarella or natural Muenster cheese.
  • 2 t. prepared mustard (optional)

Directions
  1. Sauté zucchini and onion in margarine for 10 min.
  2. Stir in seasonings.
  3. Combine eggs and cheese; stir into vegetables.
  4. Spread unbaked pie crust with mustard, if desired.
  5. Pour vegetable mixture into crust.
  6. Bake @ 375 deg. for 18 to 20 minutes or until center is set.
