ITALIAN ZUCCHINI QUICHE

- 4 cups thinly sliced zucchini shopping list
- 1 cup chopped onion shopping list
- ¼ to ½ cup margarine shopping list
- ½ cup chopped parsley or 2 T. dried flakes shopping list
- ½ t. salt shopping list
- ½ t. pepper shopping list
- ¼ t. garlic powder shopping list
- ¼ t. basil shopping list
- ¼ t. oregano leaves shopping list
- 2 beaten eggs shopping list
- 8 oz. (2 cups) shredded mozzarella or natural muenster cheese. shopping list
- 2 t. prepared mustard (optional) shopping list
How to make it
- Sauté zucchini and onion in margarine for 10 min.
- Stir in seasonings.
- Combine eggs and cheese; stir into vegetables.
- Spread unbaked pie crust with mustard, if desired.
- Pour vegetable mixture into crust.
- Bake @ 375 deg. for 18 to 20 minutes or until center is set.
