How to make it

  • Heat cider, lemon juice and honey in medium, heavy saucepan over high heat
  • In medium bowl, combine sugar, cornstarch, cinnamon and nutmeg
  • Once cider boils, whisk in dry ingredients until fully incorporated
  • Continue to cook on a low boil until syrup reduces by about 1/3 and is thickening.(Will also thicken more upon cooling)
  • Remove from heat and add vanilla and butter and stir well to combine.
  • Serve warm or cooled.
  • **You can certainly reduce the sugar and cornstarch amounts and use more cider, just boil longer for a more concentrated apply syrup. Cider is expensive and not as easy to get, here, as in other parts of the country, so I didn't want to use it all up! :) If it's easier for you to get, by all means, use more! :)
