Apple Cider Syrup

- 3 cups fresh apple cider shopping list
- 1/4-1/2 cup honey(depends on how sweet you want it) shopping list
- 1/4 cup raw or light brown sugar shopping list
- juice from 1/2 lemon shopping list
- 1t vanilla shopping list
- 1/4 cup cornstarch or arrowroot powder shopping list
- 1/4t fresh grated nutmeg shopping list
- 1/2t cinnamon shopping list
- 4T butter shopping list
How to make it
- Heat cider, lemon juice and honey in medium, heavy saucepan over high heat
- In medium bowl, combine sugar, cornstarch, cinnamon and nutmeg
- Once cider boils, whisk in dry ingredients until fully incorporated
- Continue to cook on a low boil until syrup reduces by about 1/3 and is thickening.(Will also thicken more upon cooling)
- Remove from heat and add vanilla and butter and stir well to combine.
- Serve warm or cooled.
- **You can certainly reduce the sugar and cornstarch amounts and use more cider, just boil longer for a more concentrated apply syrup. Cider is expensive and not as easy to get, here, as in other parts of the country, so I didn't want to use it all up! :) If it's easier for you to get, by all means, use more! :)
