- 2 pounds zucchini shopping list
- 1 small chili pepper, diced shopping list
- 1 small red pepper, diced shopping list
- 2 tablespoons butter shopping list
- 1 small onion, chopped shopping list
- 2 tablespoons baking soda shopping list
- 2 teaspoons vinegar shopping list
- 5 eggs shopping list
- salt and pepper to taste shopping list
- 3/4 pound mozzarella cheese, grated shopping list
- 3/4 pound cheddar cheese, grated shopping list
- 1/2 pint half and half shopping list
- 4 tablespoons flour shopping list
- 1/2 pound bread crumbs shopping list
- 1/4 pound butter shopping list

How to make it
- Directions:
- Wash and stem the zucchini.
- Cut into one-half-inch cubes.
- Place in a pan with the peppers and salted water.
- Bring to boil over high heat.
- Reduce heat and simmer, covered, for seven minutes.
- Drain and set aside.
- In a skillet heat the two tablespoons butter and saute the onion for five minutes.
- Meanwhile, dissolve the baking soda in the vinegar.
- Beat the eggs lightly in a separate bowl and mix all the ingredients together, lightly, except the bread crumbs, butter and paprika.
- Generously grease a 14x9-inch pyrex dish.
- Spread a layer of bread crumbs over the bottom.
- Cover with the zucchini mixture.
- Sprinkle with another layer of bread crumbs.
- Cut the remaining butter into pieces and dot the casserole.
- Bake at 375 degrees for about twenty to thirty minutes or until browned.
- Sprinkle with the paprika and serve hot.
