How to make it

  • mix together soy sauce, lemon juice, sherry, honey, thyme, curry powder, oregano, ginger, pepper, garlic
  • Place marinade with the chicken into a reseable bag and marinate for at least 30 minutes or up to 24 hours(the longer it marinates the better the flavor)
  • Prepare the rice by heating the olive oil in a skillet and cook the chicken pieces until browned and sprinkle with prunes and apricots pour the marinade in to the skillet bring to a summer cover and cook for 30 minutes simmer until sauce is thickened and chicken is done
