How to make it

  • Heat oil in skillet over medium heat; add onion, celery and carrot and cook until carrot is just starting to get tender (about 5 minutes)
  • Add garlic and jalapeno; cook 2-3 minutes; add butter. When butter is melted, add rice, oregano, cumin, chili powder and cayenne. Season to taste with salt & pepper. Add pork and stock; cover and cook about 5 minutes or until pork is heated through. Stir in cilantro.
  • Garnish as desired with avocado, tomatoes, scallions and/or sour cream; squeeze a bit of lime juice before serving.
