Elegant Hot Dog Relish Recipe
Awesome awesome awesome is all I can say about this delightful relish recipe I obtained from an estate sale. I make this every summer without fail. Everyone loves it and it is good all year long. Yummo

Ingredients
  • 13 medium cucumbers washed and finely chopped
  • 3 red bell peppers washed seeded and finely chopped
  • 6 green bell peppers washed seeded and finely chopped
  • l extra large sweet onion finely chopped
  • 1 gallon water
  • 1/4 cup pickling salt
  • 4 cups distilled white vinegar
  • 2 cups water
  • 6 cups sugar
  • 4 teaspoons mustard seed
  • 4 teaspoons celery seed
  • 15-1/2 ounce can crushed pineapple
  • 2 tablespoons dry mustard
  • 1 tablespoon turmeric
  • l cup all purpose flour

Directions
  1. Combine vegetables in a large bowl.
  2. Mix 1 gallon water and pickling salt then pour over vegetables and let stand overnight.
  3. Thoroughly wash and scald 11 pint size jars.
  4. Keep hot until needed.
  5. Prepare lids as manufacturer directs.
  6. In large kettle bring vegetables and water to a boil.
  7. Drain vegetables thoroughly.
  8. Wash kettle then combine vegetables, vinegar, water, sugar, mustard and celery seeds.
  9. Bring to a boil stirring occasionally.
  10. Meanwhile drain pineapple juice into a glass measure reserving fruit.
  11. In small bowl mix dry mustard, turmeric and flour.
  12. Using a wire whisk slowly add pineapple juice and enough liquid from hot vegetable mixture to make a thin smooth paste. Carefully add mustard paste a little at a time to hot vegetable mixture stirring constantly.
  13. Stir in reserved pineapple then simmer until relish has thickened slightly stirring constantly.
  14. Remove from heat. Immediately ladle into hot jars leaving 1/4" head space.
  15. Wipe jar rims then seal with hot lids and screw bands.
  16. Process 10 minutes in a simmering water bath.

This really sounds delightful! Haven't done much canning lately, but you've definitely lit that spark in me again ~ thanx for a great post! :-)


Well, I must admit that I never thought of relish as elegant but this recipe has changed my mind, lol. It definitely sounds elegant, can't wait to try it.
