Pasta Casserole

- 3 cups pasta, rotini or penne shopping list
- 2 small tomatoes, sliced shopping list
- 3 large mushrooms, sliced shopping list
- 1/4 cup pasta sauce shopping list
- 2tbsp fresh basil, chopped shopping list
- 2tbsp fresh rosemary, chopped shopping list
- 2tbsp fresh parsley, chopped shopping list
- 3 cloves garlic, diced shopping list
- 1 small onion, diced shopping list
- 1/4 cup olive oil shopping list
- 2 cups grated cheddar cheese shopping list
- 1 cup grated parmesan shopping list
How to make it
- Boil water to cook pasta, cook until slightly undercooked (al dente is good, they will cook a bit more in the oven) (while waiting for water to boil/pasta to cook is a good time to slice/chop/prep ingredients)
- Toss pasta with half of olive oil, a handful of the herbs and cheese, to coat lightly
- Layer the tomato sauce, tomato slices and mushroom slices, fresh herbs and garlic, pasta mixture and cheese in a large casserole dish
- Bake at 350 degrees Fahrenheit until cheese is melted and bubbling
- Let cool 5 minutes. Enjoy!
