Tomato And Bread Soup

- 1 cup virgin olive oil shopping list
- 3 garlic cloves..smashed/chopped shopping list
- 1/2 cup fresh sage leaves, chopped finely shopping list
- 1/4 cup fresh basil, chopped finely shopping list
- 8 oz. stale or coarse French bread ,thinly sliced shopping list
- salt and fresh ground pepper shopping list
- 8 cups beef broth...may use chicken broth for lighter taste shopping list
- 2 lbs fresh peeled tomatoes, chopped or canned if desired shopping list
- **Using fresh tomatoes from the garden, place them in hot water for 10-15 seconds to loosen skin, easier to peel with paring knife** shopping list
How to make it
- Heat oil, add garlic, sage and basil in large sauce pan.
- Add thinly sliced bread.
- Brown both sides.
- Bring broth to boil in a different saucepan.
- Put chopped tomatoes into bread mixture.
- Pour in broth.
- Reduce heat and simmer, covered, for 40 minutes.
- Taste, add salt and pepper if necessary.
- Pour into a tureen or individual bowls.
- Serve with grated cheese. Enjoy!

Pappa al Pomodoro...Tuscan Tomato Bread Soup....I love this; sometimes have it instead of Panzanella Salad. You would like Ribollita probably too -- Tuscan Vegetable Bread Soup...Thanks for the post!
