Tomato And Bread Soup Recipe
A fabulous soup to use fresh garden tomatoes and spices. Top with freshly grated cheese and serve with a salad...:)

Ingredients
  • 1 cup virgin olive oil
  • 3 garlic cloves..smashed/chopped
  • 1/2 cup fresh sage leaves, chopped finely
  • 1/4 cup fresh basil, chopped finely
  • 8 oz. stale or coarse french bread ,thinly sliced
  • Salt and fresh ground pepper
  • 8 cups beef broth...may use chicken broth for lighter taste
  • 2 lbs fresh peeled tomatoes, chopped or canned if desired
  • **Using fresh tomatoes from the garden, place them in hot water for 10-15 seconds to loosen skin, easier to peel with paring knife**

Directions
  1. Heat oil, add garlic, sage and basil in large sauce pan.
  2. Add thinly sliced bread.
  3. Brown both sides.
  4. Bring broth to boil in a different saucepan.
  5. Put chopped tomatoes into bread mixture.
  6. Pour in broth.
  7. Reduce heat and simmer, covered, for 40 minutes.
  8. Taste, add salt and pepper if necessary.
  9. Pour into a tureen or individual bowls.
  10. Serve with grated cheese. Enjoy!
