How to make it

  • Place a cookie cutter, Mason jar ring or a ring made from aluminum foil inside a slow cooker. Mine came with a metal rack so I used that. Butter a 5” mini loaf pan and set aside.
  • Combine the flour, baking soda and salt in a small bowl. Add oil, brown sugar, egg yolk, banana, milk and vanilla, stirring just until flour mixture is incorporated. Fold in nuts.
  • Scrape batter into prepared loaf pan. Set loaf pan on top of ring in slow cooker. See Photo
  • Place paper towels over the top of the slow cooker. Blog poster did not mention how many – I used three. Cover and cook on high for 2 hours See Photo. When a toothpick inserted in the middle of the loaf come out clean, the bread is cooked See Photo. If it isn't clean, continue cooking an additional 30 minutes.
  • Carefully remove the loaf pan from the slow cooker. Run a knife around the inside of the loaf pan and turn the loaf out onto a rack to cool See Photo. Serve warm or at room temperature.
  • You can also bake this at 350F for 50 minutes.
