Slow Cooker Banana Bread For One Or Two

- 1/2 cup plus 2 Tbs all purpose flour shopping list
- 1/4 tsp baking soda shopping list
- pinch of salt shopping list
- 3 Tbs vegetable oil shopping list
- 1/4 cup light or dark brown sugar shopping list
- 1 large egg yolk shopping list
- 1/2 cup mashed banana (one small banana) shopping list
- 1 Tbs milk shopping list
- 1/2 tsp vanilla extract shopping list
- 1/4 cup walnuts, chopped (I did not add nuts) shopping list
How to make it
- Place a cookie cutter, Mason jar ring or a ring made from aluminum foil inside a slow cooker. Mine came with a metal rack so I used that. Butter a 5” mini loaf pan and set aside.
- Combine the flour, baking soda and salt in a small bowl. Add oil, brown sugar, egg yolk, banana, milk and vanilla, stirring just until flour mixture is incorporated. Fold in nuts.
- Scrape batter into prepared loaf pan. Set loaf pan on top of ring in slow cooker. See Photo
- Place paper towels over the top of the slow cooker. Blog poster did not mention how many – I used three. Cover and cook on high for 2 hours See Photo. When a toothpick inserted in the middle of the loaf come out clean, the bread is cooked See Photo. If it isn't clean, continue cooking an additional 30 minutes.
- Carefully remove the loaf pan from the slow cooker. Run a knife around the inside of the loaf pan and turn the loaf out onto a rack to cool See Photo. Serve warm or at room temperature.
- You can also bake this at 350F for 50 minutes.
