Thai Shrimp Boats

- 12 raw shrimp (31-40) peeled shopping list
- Perth Pepper & Pestle Thai basil Red Pepper Jelly (any red pepper jelly that you like could totally be subbed) (I bet you could even use sweet Thai chili sauce) shopping list
- 2 Belgian endives shopping list
- crushed peanuts shopping list
- zest of lime shopping list
- Lime Cream cheese : shopping list
- 125 grams spreadable cream cheese shopping list
- zest from one lime shopping list
- 1/4 cup crushed peanuts shopping list
How to make it
- Lime Cream Cheese:
- Lightly blend the cream cheese until smooth.
- Mix in the zest of the limes and crushed peanuts.
- Caramelizing the shrimp:
- Briefly marinate the shrimp in 2 tbsp. of the Red Pepper Jelly. Pour the Jelly marinade into a frying pan and reduce until it starts to thicken. Add the shrimp and quickly pan fry them until the red pepper jelly has coated them and caramelized and the shrimp is pink and cooked. Remove from heat.
- Assembling the shrimp boats:
- Remove outer soft leaves of the endive. Seperate the remainder. I found that I got six leaves from each endive and I cut off the harder white part on some of the larger leaves so they were all more or less uniform in size.
- Gently spoon in one teaspoon of lime cream cheese into the base of the leaf. Top with a half tsp. of pepper jelly. Top that with 1 caramelized shrimp and then sprinkle with crushed peanuts and lime zest.
