How to make it

  • Dice all the leftovers finely.
  • Finely dice the onion(s)
  • In an oiled skillet, fry the diced onion until soft.
  • Add all the other chopped veg and fry gently until hot - it sounds a long time but 20 minutes is about right.
  • If the mix looks a tad dry, add a little more oil (or butter).
  • Taste - season with salt and pepper.
  • Serve with the meat of your choice.
