Artichoke Sampler

- 2 (6 ounce) jars marinated artichoke hearts, undrained shopping list
- 1 onion, chopped shopping list
- 1 clove garlic, minced shopping list
- 4 large eggs, lightly beaten shopping list
- 1/4 cup fine, dry bread crumbs shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon dried oregano shopping list
- 1/8 teaspoon pepper shopping list
- Dash of hot sauce shopping list
- 2 cups shredded sharp Ceddar cheese shopping list
How to make it
- Drain artichoke hearts, reserving liquid from one jar.
- Finely chop artichoke hearts, and set aside
- Saute onion and garlic in reserved liquid in a large skillet over medium heat until tender. Set aside.
- Combine eggs, breadcrumbs, salt, oregano, pepper, and hot sauce in a bowl, stirring with a wire whisk until blended.
- Add chopped artichoke, onion mixture, and cheese: stir well.
- Pour into a greased 11 x 7 baking dish.
- Bake uncovered @ 325 degrees for 25-30 minutes or until set.
- Cut into squares.
