Artichoke Sampler Recipe
This is a great side dish for a brunch or can be cut in smaller pieces for an appetizer

Ingredients
  • 2 (6 ounce) jars marinated artichoke hearts, undrained
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 4 large eggs, lightly beaten
  • 1/4 cup fine, dry bread crumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon pepper
  • Dash of hot sauce
  • 2 cups shredded sharp Ceddar cheese

Directions
  1. Drain artichoke hearts, reserving liquid from one jar.
  2. Finely chop artichoke hearts, and set aside
  3. Saute onion and garlic in reserved liquid in a large skillet over medium heat until tender. Set aside.
  4. Combine eggs, breadcrumbs, salt, oregano, pepper, and hot sauce in a bowl, stirring with a wire whisk until blended.
  5. Add chopped artichoke, onion mixture, and cheese: stir well.
  6. Pour into a greased 11 x 7 baking dish.
  7. Bake uncovered @ 325 degrees for 25-30 minutes or until set.
  8. Cut into squares.

I know I would love this - everything I love in one dish...garlic, artichokes, cheese, eggs - fantastic!
