Claudias Bacon-Cheddar Potatoes

- 5 lb bag of yukon gold potatoes shopping list
- 1 lb bacon shopping list
- ¼ - ½ cup olive oil shopping list
- 4 oz finely grated sharp cheddar cheese shopping list
How to make it
- Boil and cool the Yukon Gold Potatoes.
- When cool, peel and cube potatoes into about ½” cubes.
- Slice bacon making cuts about ever ¼ inch across. Separate. Fry in a large skillet. Remove and drain on paper towels.
- Leaving the bacon grease in the pan, and adding additional olive oil (you want the bottom of the skillet fully covered with a thin layer of grease/oil), fry potatoes on medium-high heat, stirring frequently.
- When they are browned, add bacon pieces and stir through the potatoes.
- Remove from heat and sprinkle the cheese evenly over the top of the potatoes.
