How to make it

  • Boil and cool the Yukon Gold Potatoes.
  • When cool, peel and cube potatoes into about ½” cubes.
  • Slice bacon making cuts about ever ¼ inch across. Separate. Fry in a large skillet. Remove and drain on paper towels.
  • Leaving the bacon grease in the pan, and adding additional olive oil (you want the bottom of the skillet fully covered with a thin layer of grease/oil), fry potatoes on medium-high heat, stirring frequently.
  • When they are browned, add bacon pieces and stir through the potatoes.
  • Remove from heat and sprinkle the cheese evenly over the top of the potatoes.
