How to make it

  • Preheat oven to 400 degrees. Unfold puff pastry and roll the rectangle to about 10-12 inches long. Place on a greased cookie sheet.
  • Spread the pesto evenly over the entire pastry. Sprinkle with half the cheese, top with tomato slices, and lightly sprinkle with salt and pepper. Top with the remaining cheese.
  • Bake in the preheated oven for 15-18 minutes, until puff pastry is golden brown. Cut into as big or as small of squares as you'd like, a pizza cutter works great! I think I cut 12 :)

    That's so lovely Michelle! It'd also make a nice lunch for guests with a salad on the side in the summer time. Very cool!
