Chopped Chicken Ragu

- ½ tbsp olive oil shopping list
- ¾ lb boneless skinless chicken thighs, cut in bite-size pieces shopping list
- 1 large Vidalia or sweet onion, diced shopping list
- 1 zucchini, diced shopping list
- 3 sprigs fresh rosemary, leaves stripped shopping list
- 2 cloves garlic, minced shopping list
- 3 large carrots, peeled and finely grated shopping list
- ¼ cup red wine shopping list
- 28 oz low sodium canned whole tomatoes shopping list
- 3 tbsp tomato paste shopping list
- black pepper and Kosher salt to taste shopping list
How to make it
- In a deep pot, warm oil over medium-high heat.
- Add the chicken and brown, stirring occasionally, 5 to 6 minutes.
- Stir in the onions, zucchini, rosemary and garlic. Cook 3-4 minutes.
- Add the carrot and cook, stirring, 5 minutes.
- Add the wine, stirring well, and cook for 2 minutes.
- Add tomatoes, crushing them into the sauce, then add tomato paste.
- Simmer for 15 minutes, adding add pepper and salt to taste.
- Serve with your favourite grain (I suggest kasha or brown rice).
