Deep Fried Monte Cristo Sandwiches

- For 2 sandwiches shopping list
- 4 slices white or wheat bread, but I think Brioche is best! shopping list
- 4 slices cooked, sliced chicken breast shopping list
- 4 slices cooked ham shopping list
- 2 slices American cheese shopping list
- 2 slices Swiss or Gruyere cheese shopping list
- Batter: shopping list
- 1 large egg shopping list
- ½ cup plus 2 tablespoons water shopping list
- 1/4 tsp. salt shopping list
- 1 tsp. granulated white sugar shopping list
- ¾ cup flour shopping list
- ½ Tbs. baking powder shopping list
- Peanut Oil (for deep frying)…you will need about 1” deep oil in a deep sided skillet. shopping list
- Powdereed sugar, for dusting finished sandwiches shopping list
- Fruit jam, of your choice, for serving shopping list
How to make it
- On two pieces of bread, place 2 slices chicken and 1 slice of Swiss or Gruyere cheese, then 2 slices ham and 1 slice American cheese. Place second slice of bread on top of layers, and secure the sandwiches in the corners with long tooth picks.
- For batter, place egg in mixing bowl, add water and beat together. Add salt, sugar, flour, and baking powder. Beat batter until smooth. Dip sandwiches in batter, making sure to cover all sides and surfaces.
- Carefully place dipped sandwiches in about 1” of hot oil (about 350 degrees), in a heavy, deep skillet, frying until golden. Carefully flip and brown other side of sandwich. When sandwiches have fried to a golden brown, remove from pan with a slotted spatula, and place on paper towel to soak up any excess oil. Let cool for a few minutes before removing the tooth picks. Before serving slice into fourths and sprinkle with powder sugar. Serve with any fruit jam, such as strawberry, raspberry or blueberry!

I haven't had one of these in 30 years! I used turkey instead of chicken and cheddar instead of American because that was what I had. I also fried it in vegetable oil. Very filling! Made a nice breakfast. A bit more in IMI 3/19/16
