How to make it

  • In soup pot, over med heat, start browning Italian sausage like you would ground beef.
  • Once it starts browning throw in your onion and garlic and let it start to sweat for about 2 minutes.
  • Next add the carrots. Keep tossing it around until the onions are opaque and the sausage is cooked through.
  • Pour in the chicken broth, water, Rotel tomatoes, Italian seasoning, salt, pepper, garlic powder and tomato paste.
  • Let it simmer together for 30 minutes.
  • After simmering for 30 minutes, add the frozen tortellini and simmer for another 10 minutes or until the tortellini is cooked through.
  • Serve with Parmesan cheese.

    April 4/16 Wow what a fantastic recipe. The only tweak I had done was with the simmering. I love to allow soups to simmer longer so just before adding the tortellini I allowed it to simmer for 1 hour then after adding the soup simmered for over an hour. Will be making again thank you Beshy74 for sharing this wonderful recipe.
