How to make it

  • Trim any overhanging skin from the chicken pieces. Combine the Spice Rub ingredients together in a small bowl. Rub spice mixture over all chicken pieces and under the skin of breast pieces; refrigerate for about 1 hour. Or cover with plastic and leave for several hours.
  • Whisk maple syrup, yellow mustard, brown mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika, and black pepper together in a bowl, and set aside or refrigerate until ready to use.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Roast in the preheated oven for 20 minutes then baste chicken with maple glaze if using. Rotate pan; roast another 15-20 minutes or until chicken is no longer pink at the bone and juices run clear. An instant-read thermometer inserted near the bone of the thigh should read 165 degrees F.
  • ~This can be done on the grill as well, just make extra glaze.

    Chicken quarters are a favorite here, they are CHEAP and delicious! Definitely bookmarked, the rub sounds delish!
