Spice Roasted Chicken Quarters

- 6-8 chicken quarter pieces, or thighs (bone-in, skin-on) shopping list
- **Spice Rub** shopping list
- 1 tablespoon brown sugar shopping list
- 1/2 tablespoon sea salt or large flaked salt (or 1 tsp table salt) shopping list
- 1 1/2 teaspoons garlic powder shopping list
- 1 1/2 teaspoons onion powder shopping list
- 1 1/2 teaspoons paprika shopping list
- 1 teaspoon dried oregano shopping list
- 1/2 teaspoon dry mustard shopping list
- 1/2 teaspoon celery seed shopping list
- 1/4 teaspoon black pepper shopping list
- pinch of cayenne pepper shopping list

- Glaze: (optional!) shopping list
- 1/4 cup maple syrup (or honey if desired) shopping list
- 1 tablespoon yellow mustard shopping list
- 1 1/2 teaspoons spicy brown mustard shopping list
- 1/2 teaspoon garlic powder shopping list
- 1/2 teaspoon onion powder shopping list
- 1/2 teaspoon paprika shopping list
- 1/4 teaspoon ground black pepper shopping list
How to make it
- Trim any overhanging skin from the chicken pieces. Combine the Spice Rub ingredients together in a small bowl. Rub spice mixture over all chicken pieces and under the skin of breast pieces; refrigerate for about 1 hour. Or cover with plastic and leave for several hours.
- Whisk maple syrup, yellow mustard, brown mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika, and black pepper together in a bowl, and set aside or refrigerate until ready to use.
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
- Roast in the preheated oven for 20 minutes then baste chicken with maple glaze if using. Rotate pan; roast another 15-20 minutes or until chicken is no longer pink at the bone and juices run clear. An instant-read thermometer inserted near the bone of the thigh should read 165 degrees F.
- ~This can be done on the grill as well, just make extra glaze.
