How to make it

  • Pound the chicken thighs to flatten and trim any fat
  • Add a little olive oil to a oven proof deep pot on medium heat
  • Add the chicken thighs a few at a time so as not to overcrowd and brown until golden, about two minutes on each side.
  • Take the thighs out and keep warm, In the same pan add more oil if needed and add the bell peppers, onion, garlic salt and pepper, Sauté for five minutes. Stir so they do not stick to the pot. Add the tomatoes, and leave for about three minutes ,they will start to burst so be careful not to get splattered. Add the thighs back in the pot with the sautéed veggies and put in a 350° oven with the lid on for 30 to 40 minutes until the thighs are cooked.
  • NOTES
  • This is a very easy one pot dish to prepare. I serve it with steamed rice or mashed potatoes. You could use bone in chicken thighs just adjust the cooking time. I have also done this with boneless pork chops and it works rather well

    I’m a fan of recipes that use all fresh ingredients, are bursting with color, and go together in a snap. I was excited when this recipe was recommended to me because I had an overrun on fresh cherry tomatoes from my garden. I gave everything a quick sauté in a dutch oven style pot, gave it a good dose of salt and pepper, and then transferred to the oven. I used chicken breasts instead of thighs and served over pasta. It was very good, but I would highly recommend serving over rice as recommended in the footnote. This is like a chicken version of peppersteak and the peppers and tomatoes make such a wonderful juice that you would want rice to soak up every drop. Thanks Eastcoaster for sharing your recipe.

    Oh manella, this was so very good. Simple, easy and with ingredients that I always have on hand. The perfect dish for those times when I don't have a lot of time to spend in the kitchen yet want the family to think that I did. Very flavourful yet simple to make.
