Chicken Thighs Rustic Style

- 8 boneless skinless chicken thighs shopping list
- 1 each red, yellow, orange, green medium sized bell peppers cleaned and chopped shopping list
- 1 large white onion chopped shopping list
- 2 cloves of garlic diced shopping list
- 1 small box of either cherry or grape tomatoes shopping list
- Fresh ground black pepper shopping list
- Salt to taste shopping list
- Olive oil is needed shopping list
How to make it
- Pound the chicken thighs to flatten and trim any fat
- Add a little olive oil to a oven proof deep pot on medium heat
- Add the chicken thighs a few at a time so as not to overcrowd and brown until golden, about two minutes on each side.
- Take the thighs out and keep warm, In the same pan add more oil if needed and add the bell peppers, onion, garlic salt and pepper, Sauté for five minutes. Stir so they do not stick to the pot. Add the tomatoes, and leave for about three minutes ,they will start to burst so be careful not to get splattered. Add the thighs back in the pot with the sautéed veggies and put in a 350° oven with the lid on for 30 to 40 minutes until the thighs are cooked.
- NOTES
- This is a very easy one pot dish to prepare. I serve it with steamed rice or mashed potatoes. You could use bone in chicken thighs just adjust the cooking time. I have also done this with boneless pork chops and it works rather well
