    Chicken Thighs Rustic Style by Eastcoaster.

    This recipe was recommend to me when I was looking for something quick and easy to make with chicken. I fell in love with the idea from the moment I saw it because it uses all fresh ingredients. It just so happened that I was also looking for something to do with an overstock of cherry tomatoes. My review--

    "I’m a fan of recipes that use all fresh ingredients, are bursting with color, and go together in a snap. I was excited when this recipe was recommended to me because I had an overrun on fresh cherry tomatoes from my garden. I gave everything a quick sauté in a dutch oven style pot, gave it a good dose of salt and pepper, and then transferred to the oven. I used chicken breasts instead of thighs and served over pasta. It was very good, but I would highly recommend serving over rice as recommended in the footnote. This is like a chicken version of peppersteak and the peppers and tomatoes make such a wonderful juice that you would want rice to soak up every drop.     Oh yum, I missed this one when Eastcoaster posted it! I have some cherry and grape tomatoes from last seasons garden that I roasted and froze (had hundreds of them!) so i think this is a perfect recipe to use some of them up!! Will probably make soon :) Beautiful picture Diz, love it!

    Thanks everyone! I've always been told that a colorful meal is a healthy meal. This one is healthy for sure. Lots of Vit. C in those peppers.

    Karen_B, I did pound the breast thin, but I always do that so they cook even. However, they cook a lot faster and dry out much quicker. They're not really suited for the long cook time in this recipe without some adjustments. If you want a breast that is somewhat moist, it would be best to leave them whole and go with the 30 min. cook time. If the peppers aren't done, you can always remove the chicken and let the rest continue cooking.

    Call me Stu Pid. Burnt my fingers on the hot lid. Burnt my mouth on the hot food.
    Good flavoring all around. Served over rice. By the time the rice was done the thigh/pepper pot was done. Couldn't have timed it better. Could have waited a little for it to cool off.

    Catch a good sale on the thighs. Remember you are throwing half the weight away when you skin and bone them.
