Old Fashioned Porridge And Molasses Bread

- 3 cups of boiling water shopping list
- 2 cups rolled oats shopping list
- 1/4 cup shortening shopping list
- 1 cup lukewarm water shopping list
- 2 teaspoons white sugar shopping list
- 2 envelopes active dry yeast shopping list
- 2/3 cup molasses shopping list
- 4 teaspoons salt shopping list
- 8 1/2 cups all-purpose flour shopping list
- More flour if needed shopping list
How to make it
- Heat oven to 400 Pour the 3 cups of boiling water over the 2 cups of rolled oats and the 1/4 cup shortening in a large bowl.
- Stir until shortening melts and let stand for 20 minutes,giving it a stir once in a while
- Meanwhile dissolve the 2 teaspoons of sugar in a cup of lukewarm water and
- add the 2 envelopes of yeast and let stand 10 minutes, then stir briskly with a fork
- Stir into the partially cooled rolled oat mixture the 2/3 cup of molasses
- and 4 teaspoons of salt
- Cool to lukewarm
- Add softened yeast mixture to the rolled oat mixture and stir
- Beats it in 2 1/2 cups of flour then gradually and in 5 1/2 to 6 more cups of flour
- Turn dough onto a floured surface and knead 8 to 10 minutes
- Shape into a smooth ball and place in a greased bowl rolling the dough so the top is greased
- Cover and let double in size, (about 1-1 and1/2 hour
- Punch down in shape into four loaves
- Place in greased bread pans 8 and1/2x 4 and 1/2 inch
- Cover and let rise again for about 1 hour until doubled
- Bake in preheated 400° oven for 30 to 35 minutes
- NOTES:
- I always stirred this by hand but now I have a KA stand mixer so I use that.
- Depending where you live you might need to more or less flour
- I find it does not rise well on a dull day, but does on a nice sunny day. I let my dough rise in my oven with the light on so l do not cover it.
- Sometimes I get three nice loaves, I guess it depends on the day. This bread freezes very well. When I freeze the bread I cut it in slices first that way you take out the number of slices you want.Very good toasted.
