Roasted Beet Salad

- 2 medium sized beets shopping list
- 1 tsp. olive oil shopping list
- salt and pepper shopping list
- capers shopping list
- chopped dill pickles shopping list
- 2 dashes Worcestershire sauce shopping list
- 3 dashes Hot sauce (I used Cholula) shopping list
- parsley shopping list
How to make it
- Cut off very tips of beets and wrap in tinfoil.
- Bake in a 425F oven for 45 min. or until tender.
- Let beets cool. Peel, slice and put in a bowl.
- To the beets, add a bit of olive oil, salt and pepper to taste, capers (until it looks like the right amount), dill pickle chunks ('til it looks right too), Worcestershire and Hot Sauce.
- Arrange on a plate to serve. Sprinkle with parsley. Enjoy.
