The title literally means 'quick quick' in Italian, so you get the idea... A quick and easy pasta prep. All ingredients must be fresh!

Ingredients
  • Cappellini (Angel Hair Pasta)- about 1 third package
  • 2 large tomatoes-roughly chopped in about 1 inch pieces
  • 4-5 large cloves garlic - smashed, peeled and left whole
  • 2-3 'heads' of Basil leaves
  • 2 TBSP olive oil
  • salt to taste

Directions
  1. Heat oil in a medium saute pan on medium low heat on front burner.
  2. Put water for pasta w/1TBSP salt on back burner-bring to a boil.
  3. When oil is hot (while water is on), toss in garlic and let brown-about 1 minute, turning once.
  4. While garlic is cooking, roughly chop tomatoes.
  5. When garlic is browned, add tomatoes and about 1 TBSP salt.
  6. Cover, shake pan, and let simmer for a couple of minutes.
  7. By now water should be ready-Add pasta.
  8. Toss basil into tomato pan-shake around.
  9. When pasta is just cooked-turn off heat of both pans.
  10. With tongs, transfer pasta to tomato pan and toss together.
  11. Serve right away with freshly grated parmesan.
  12. *Feel free to add a couple extra cloves of garlic...it really makes this dish!
