How to make it

  • Heat oil in a medium saute pan on medium low heat on front burner.
  • Put water for pasta w/1TBSP salt on back burner-bring to a boil.
  • When oil is hot (while water is on), toss in garlic and let brown-about 1 minute, turning once.
  • While garlic is cooking, roughly chop tomatoes.
  • When garlic is browned, add tomatoes and about 1 TBSP salt.
  • Cover, shake pan, and let simmer for a couple of minutes.
  • By now water should be ready-Add pasta.
  • Toss basil into tomato pan-shake around.
  • When pasta is just cooked-turn off heat of both pans.
  • With tongs, transfer pasta to tomato pan and toss together.
  • Serve right away with freshly grated parmesan.
  • *Feel free to add a couple extra cloves of garlic...it really makes this dish!
