How to make it

  • First wash chicken; pat dry.
  • Then season chicken generously with salt and pepper.
  • Next you want to sprinkle half of oregano, rosemary and garlic inside cavity of chicken.
  • Now you can melt butter in frying pan and brown chicken; transfer to slow cooker or crockpot.
  • Then sprinkle with remaining oregano, rosemary and garlic.
  • Add your sherry to frying pan and stir to loosen brown bits; pour into slow cooker.
  • Finally, cook on LOW flame for approx. 7 hours; adding in the lemon juice and cook approx. 1 more hour (total of 8); transfer your chicken to cutting board; skim fat from juices and serve over chicken.

    I just made this the other day and it was delicious! Of course, I doubled the amount of lemon (at least). I used boneless, skinless breasts, and put in a quarter-cup at the beginning, plus another 1/4 cup (maybe more) at the end. I was in a hurry in the morning, so I didn't brown the chicken first. It was great -- we're having the leftovers tonight!

    I think I want to try this. We are due for some chicken other than fried. I have big eaters. I have 5 people but cook for 7. Most like will make in the oven.

    Made this the other day with boneless skinless chicken breasts (it's what I had on hand). I wouldn't recommend it- it came out very dry. If do it again I'll reduce the cooking time. The recipe though is great, and the flavours are very nice. I'm sure it works very well with chicken pieces on the bone.

    I tried this for my husband's birthday. Wow!! Easy and delicious. I will definitely do this again. Can't go wrong with a crockpot recipe. I did find that I can cut back the cooking time. My chicken was so tender it fell apart.

    Help me! Think I'm working with a typo here. The recipe list calls for a cut-up chicken but the instructions given are for a whole chicken. Which way am I going here?

    I made this for dinner last night & it was just amazing! It was the most moist, tender chicken I ahve ever made. And do easy too! :) I was out of rosemary & fresh garlic so I generously sprinkled lemon pepper over the entire chicken inside & out. I also used chicken broth rather than the sherry. The sauce was divine! Thanks so much for this fabulous recipe. Only chickens in crockpots for me from now on!!!
