How to make it

  • With a paring knife, cut criss-cross marks across both sides of the pork. Gentle slashes, no more than an 1/8" thick. If there's a layer of fat on one side, cut slits into the fat an inch apart (this stops the meat from curling when cooked)
  • Mix the spice rub together, and rub into all sides of the meat, making sure to get some into the cut marks. Loosely cover, and refrigerate for minimum 1 hour. 6 hours is ideal or overnight is fine.
  • Preheat the oven to Broil (broil on low if your oven allows) Place the bread crumbs on a plate and lightly the coat the chops on all sides. Evenly place the chops on a lightly greased baking sheet. Lightly spray the top of the pork chops with the oil spray.
  • Broil for 3-4 minutes on each side, until golden crisp. Turn the oven to 350f degrees, and place the chops on the middle rack. Cook for approx. 10-15 more. Just until it reaches 165f internal temperature. Do not overcook! Since ovens vary, make sure to check on them early. (my oven they are done in ten minutes, thinner chops will take 5-8min)
  • Let the pork chops rest for at least 5 minutes before serving.
  • ***Alternatively, you can skip the broiling and fry the chops on the stove-top before baking. Pan frying will produce a more even crisp coating, but I prefer to make less mess and have the least amount of dishes to do! ;)

    Followed the recipe for the most part. I used lactose, gluten free oatmeal ground up fine in place of the bread crumbs. The oatmeal has no taste so i have to add to it. I used all that was in the recipe but also added fresh rosemary, basil and Italian parsley chopped up very fine.I did use the turmeric because we like it.
    They turned out very moist and tasty, will be making them again.
