Chicken Scarpariello

- 1/2 lb of hot italian sausage links,cut into 1 1/2 ins pieces shopping list
- 1 med oinion chopped shopping list
- 2 cloves garlic ,crushed shopping list
- 2 tbsp,tomato paste shopping list
- 2tbsp,balsamic vinegar shopping list
- 1tsp,dried Italian seasoning or dried thyme shopping list
- 1pt grape tomatoes shopping list
- 1pkg (8oz) mushrooms shopping list
- 1 chicken 3 1/2 to 4 lbs) cut up,skin removed from all pieces except the wings shopping list
- salt and pepper. shopping list
How to make it
- In a 12ins non stick skillet,cook sausage pieces about 6 min over medium heat until well browned,turn occasionally.
- Transfer sausage to a 5 or 6 quart slow cooker.Add onion to skillet and cook 4 min until slightly softened,stir in garlic and cook 1 min,stirring.Remove skillet from the heat stir in tomato paste, vinegar
- and italian seasoning until blended,then add the tomatoes and mushrooms,spoon vegetable mixture into slow cooker and stir to combine.
- Sprinkle chicken with 1/4 tsp salt and 1/4 tsp ground black pepper,int he same skillet cook chicken pieces(in 2 batches if needed)over medium high heat until done,about 10 min,Place chicken on top of vegetable mixture in slow cooker,Cover slow cooker with the lid and cook low for 8 hours or high for 4 hours.
- skim fat from juices before serving
