Chicken Scarpariello Recipe
This dish has the hot italian sausage mixed with the garlic and tomao sauce,giving it lots of full flavor...I got this recipe from a friend and i have tried it definately a winner with my family.

Ingredients
  • 1/2 lb of hot Italian sausage links,cut into 1 1/2 ins pieces
  • 1 med oinion chopped
  • 2 cloves garlic ,crushed
  • 2 tbsp,tomato paste
  • 2tbsp,balsamic vinegar
  • 1tsp,dried Italian seasoning or dried thyme
  • 1pt grape tomatoes
  • 1pkg (8oz) mushrooms
  • 1 chicken 3 1/2 to 4 lbs) cut up,skin removed from all pieces except the wings
  • Salt and Pepper.

Directions
  1. In a 12ins non stick skillet,cook sausage pieces about 6 min over medium heat until well browned,turn occasionally.
  2. Transfer sausage to a 5 or 6 quart slow cooker.Add onion to skillet and cook 4 min until slightly softened,stir in garlic and cook 1 min,stirring.Remove skillet from the heat stir in tomato paste, vinegar
  3. and italian seasoning until blended,then add the tomatoes and mushrooms,spoon vegetable mixture into slow cooker and stir to combine.
  4. Sprinkle chicken with 1/4 tsp salt and 1/4 tsp ground black pepper,int he same skillet cook chicken pieces(in 2 batches if needed)over medium high heat until done,about 10 min,Place chicken on top of vegetable mixture in slow cooker,Cover slow cooker with the lid and cook low for 8 hours or high for 4 hours.
  5. skim fat from juices before serving

Having grown up to an Italian family, I can tell you I often groveled to eat dinners there rather than my own home. This was one of the dishes I remember so well from those years and I loved it. Great taste. They just simmered and stirred with each pass through the kitchen.
