How to make it

  • In a 12ins non stick skillet,cook sausage pieces about 6 min over medium heat until well browned,turn occasionally.
  • Transfer sausage to a 5 or 6 quart slow cooker.Add onion to skillet and cook 4 min until slightly softened,stir in garlic and cook 1 min,stirring.Remove skillet from the heat stir in tomato paste, vinegar
  • and italian seasoning until blended,then add the tomatoes and mushrooms,spoon vegetable mixture into slow cooker and stir to combine.
  • Sprinkle chicken with 1/4 tsp salt and 1/4 tsp ground black pepper,int he same skillet cook chicken pieces(in 2 batches if needed)over medium high heat until done,about 10 min,Place chicken on top of vegetable mixture in slow cooker,Cover slow cooker with the lid and cook low for 8 hours or high for 4 hours.
  • skim fat from juices before serving

    Having grown up to an Italian family, I can tell you I often groveled to eat dinners there rather than my own home. This was one of the dishes I remember so well from those years and I loved it. Great taste. They just simmered and stirred with each pass through the kitchen.
