How to make it

  • In a large non stick skillet, melt butter over medium heat on stovetop.
  • Add hash brown potatoes; saute for 6 to 8 minutes until lightly browned.
  • Add eggs and salsa; cook for 5 to 7 minutes until eggs are firm, stirring frequently.
  • Stir in bacon.
  • Evenly divide egg mixture among tortillas, leaving 1/2 inch border around edge. Sprinkle with cheese, roll up tightly.
  • Garnish with sour cream, salsa, and cheese if desired
