Breakfast Tortillas

- 2 tablespoons butter shopping list
- 2 cups has brown potatoes shopping list
- 8 eggs, slightly beaten shopping list
- 6 tablespoons salsa shopping list
- 6 slices peppered bacon, cooked and crumbled shopping list
- 6 (10 inch) flour tortillas shopping list
- 1 cup shredded cheddar cheese shopping list
- Garnish: sour cream, salsa, shredded cheddar cheese shopping list
How to make it
- In a large non stick skillet, melt butter over medium heat on stovetop.
- Add hash brown potatoes; saute for 6 to 8 minutes until lightly browned.
- Add eggs and salsa; cook for 5 to 7 minutes until eggs are firm, stirring frequently.
- Stir in bacon.
- Evenly divide egg mixture among tortillas, leaving 1/2 inch border around edge. Sprinkle with cheese, roll up tightly.
- Garnish with sour cream, salsa, and cheese if desired
