Ingredients

How to make it

  • In a Dutch oven, combine beans and 6 cups water.
  • Cover, and let stand 8 hours at room temperature.
  • Drain beans, and return to Dutch oven.
  • Add 4 cups water, onion, garlic, and ham hock to Dutch oven.
  • Bring to a boil, reduce heat and simmer, covered 2 1/2 hours, or until beans are tender.
  • Stir in salt and pepper.
