Ingredients
  • *Shrimp Skewers*
  • 16 Medium-Large Shrimps (shelled and de-vained)
  • 2 Cloves Garlic Finely chopped
  • Juice of 1 Lime
  • 1 Red Chili Pepper Very finely chopped
  • 1 Tsp Soy Sauce
  • 1/2 Tbsp Sesame Oil
  • 1 Tsp Freshly Grated Ginger
  • Olive Oil
  • 8 Soaked Bamboo Skewers
  • *Chicken Satay*
  • 8 Strips of Chicken Breast
  • 1/4 Cup Peanut Butter
  • 1 Tbsp Soy Sauce
  • Juice of 1 Lime
  • 1 Tsp Freshly Grated Ginger
  • Water
  • 8 Soaked Bamboo Skewers
  • *Tempeh Kebabs*
  • 8 Strips Tempeh (Or Firm Tofu if you cant find Tempeh)
  • 1 Tbsp Quality Mustard
  • 1 Tbsp Balsamic Vinegar
  • 1 Tsp Honey
  • 1 Tsp Soy Sauce
  • Olive Oil
  • 8 Soaked Bamboo Skewers
  • *Dipping Sauce*
  • 1 Tbsp Fish Sauce
  • Juice of 1 Lime
  • 1 Tsp Grated Ginger
  • 1 Red Chili Pepper very finely chopped
  • Honey
  • Olive Oil
  • *Lettuce Wraps*
  • 24 Large Boston Lettuce Leaves
  • 1 Package Bean Sprouts
  • 2 Cups Grated Carrots
  • 1 Bunch Green Onions Thinly Sliced Lenthwise
  • 1 Package Enoki Mushrooms

Directions
  1. Soak all bamboo skewers in warm water for at least 20 minutes
  2. *Shrimp Skewers*
  3. Combine all ingredients and allow to marinade for at least 30 minutes
  4. Stick 2 shrimps on each soaked bamboo skewer and grill for about 2 minutes on each side, untill orange.
  5. Do not overcook!!!
  6. *Chicken Satay*
  7. Combine all ingredients and allow to marinade for at least 30 minutes
  8. Skewer each chicken strip lenghtwise with a soaked bamboo Skewer and grill for about 5 minutes on each side, untill thuroughly cooked
  9. *Tempeh Kebabs*
  10. Combine all ingredients and allow to marinade for at least 30 minutes
  11. Skewer each tempeh strip lenghtwise with a soaked bamboo Skewer and grill for about 5 minutes on each side, untill thuroughly cooked
  12. *Dipping Sauce*
  13. Combine all ingredients, emulsify and place in a bowl
  14. *Lettuce Wraps*
  15. Carefully remove chicken, shrimp, and tempeh from skewers and lay out on a platter
  16. Lay out all other vegetables on a large platter with the bowl of dipping sauce in the middle
  17. To Construct:
  18. Take a lettuce leaf and place meat of choice along with vegetables inside the leaf and wrap the leaf around them
  19. Dip in sauce
  20. Enjoy!

I love lettuce wraps...we miss the 2 great Vietnamese restaurants we had in Denver that made the Vietnamese style skinny eggrolls that you wrapped in crisp lettuce leaves with all the condiments - GOOD STUFF...thanks for sharing your recipe! I'd love to try it.

Thankyou, I actually just made this rescipe up off the top off my head yesterday, but I tried it out last night and it turned out soooooooooo amazing. Everythintg worked perfectly and all the flavours complimented eachother increadibly well. I was so proud of myself. It is a little challenging to make because there are so many proscess steps but everything turns out great and the dipping sauce was PHENOMINAL.
