Ingredients
- 6 eggs separated
- 1 cup of heavy cream whipped
- 1/2 cup of flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 teaspoon of melted butter
- 6 slices of bacon cut in half
Directions
- Beat egg whites until very stiff.
- Beat egg yolks until thick and pale.
- Sift the dry ingredients twice and add into beaten yolks.
- Fold in the whipped cream and then the egg whites.
- Fold in melted butter very lightly.
- Cook a slice of bacon in the waffle maker for a minute or two render the fat and cook the bacon.
- Top with waffle batter and bake in the hot waffle maker until brown and crispy.
- Serve with warmed syrup, maple or blueberry.

- The famous Annabelle topped her waffle with peas! That is what made it so awful.

Gotta love that Annabelle! Actually, I love your mom - the idea of rendering some bacon fat onto the waffle maker surface sounds wonderful...I'll be trying that with my next batch (which won't be until autumn - I don't even turn on waffle makers in this nasty weather!).
