Macademia Nut Encrusted Halibut With Curry And Mango Chutney Recipe
You know how somtimes a dinner party gets sprung on you? This is the dish to make. A crowd pleaser - it looks complicated but is super-easy. Serve with a side of steamed broccolini and Jasmine Rice.

Ingredients
  • 2 Halibut Filets
  • 2 eggs
  • Flour
  • 1 Cup Macademia Nuts - processed into small pieces
  • 2 Tbsp Red Curry Paste
  • splash of veg oil
  • 1 Can Coconut Milk
  • Mango Chutney
  • Salt and Pepper
  • Corn Starch (if needed)

Directions
  1. Dredge Fillets through flour, eggs and nuts.
  2. Drizzle with melted butter and bake in oven at 350 for 20 minutes (or until nuts start to turn brown)
  3. Meanwhile, sautee curry paste in veg oil for 1 min. Add coconut milk and cook down until sauce thicken (or add a bit of corn starch dissolved in water)
  4. Plate fish on sauce with a dab of mango chutney on top.
  5. Enjoy!
