Southwest Skillet Chicken Recipe
I came up with this recipe about 15 years ago and still a favorite in this house. Very easy to assemble, yummy and pleasing to the eye

Ingredients
  • 1 lb chicken boneless, skinless breasts cut up into bit size pieces or can leave whole.
  • 2 Tbls olive or vegetable oil
  • 1 pkg (160z) bag of frozen mixed vegetables, corn, red pepper and broccoli combo.
  • 1 medium onion diced.
  • 2/3 cup picante sauce.
  • 1/3 cup water.
  • 1 ts chili powder
  • salt and pepper to taste
  • red pepper flakes, optional if want it a bit more spicy.

Directions
  1. Heat skillet that has a lid with the oil to medium high.
  2. Add chicken either diced or whole.
  3. Add onion.
  4. Cook chicken and chopped onion till juices run clear and chicken lightly browned approx 7 minutes.
  5. Add all other ingredients and bring to a boil.
  6. Reduce heat to low and cover.
  7. Cook covered for approx 15 to 20 minutes to allow flavors to meld together.
  8. Enjoy.
