How to make it

  • Preheat oven to 350F.
  • In a bowl, combine flour, brown sugar, and salt, stirring well with a whisk.
  • Cut in butter until mixture resembles coarse meal. Press mixture firmly into a 13 x 9-inch baking dish coated with cooking spray.
  • Combine figs, water and lemon juice in a saucepan, bring to a boil over medium-high heat.
  • Cook 5 minutes or until figs are tender.
  • Cool slightly. Place fig mixture and juice in a blender; process until smooth.
  • Gently spread fig mixture over prepared crust.
  • Beat granulated sugar, chevre, vanilla, and egg until smooth.
  • Pour over fig mixture and spread.
  • Bake for 30 minutes or until set and lightly browned.

    That's all i do to make oat flour 'cause I'm too cheap (and lazy) to go out any buy it seperately. I just take oatmeal (whatever's laying around) and process it until mostly fine (I leave a few bigger pieces just for some chewiness).

    This sounds fantastic - figs and chevre are a favorite combination. What is oat flour? Don't know if I can get it around here, so wondering if I can substitute oatmeal that's been whizzed in a food processor.
