How to make it

  • preheat oven to 350.
  • Put ingredients in oven safe dish and drizzle olive oil over the top. bake for 45 mins to an hour.
  • remove skin from tomatoes and proces everything in a food processor. Add salt to you tastes.
  • place in a sauce pan and simmer until reduced and thick to your liking.
  • serve on your favorite pizza or over pasta.
  • Holds in the frig for a few days or freezes well.

    I usually use what is growing in the garden. I don't grow the oversized varities as they are too watery.

    Do you use any particular type of tomatoes, i.e. plum tomatoes? I've never tried to make sauce in my oven, this is an interesting twist to try out.
