Delicious Lemon cake

- Rind of 4-5 lemons. shopping list
- juice of 1 lemon. shopping list
- 2 1/2 cups of sugar (or castor sugar) shopping list
- 3 eggs. shopping list
- 1 1/2 cups of canola oil. shopping list
- 1 1/2 cups of natural unsweetened yogurt (you can use light sour cream too). shopping list
- 3 cups self raisin flour (You can use gluten free self raisin flour too) shopping list
How to make it
- IN A LARGE BOWL, ADD:
- 1. Rind and juice of lemons
- 2. Castor Sugar
- 3. Eggs
- Mix well with a whisk or wooden spoon.
- THEN ADD TO THAT:
- 1. Grapeseed or Canola oil
- 2. Natural unsweetened yoghurt
- MIX AGAIN, THEN ADD:
- 1. Self-raising flour
- MIX UNTIL JUST BLENDED (NO LUMPS).
- Line 2 round (or 1 round + 1 loaf) or 1 big round cake tins with butter and baking paper lining on the bottom of each pan.
- Pour mixture into both and bake at 170 degrees centigrade for approximately 1 hour (or until cake tester comes out clean).
- When you take out of the oven, squeeze fresh lemon juice on each and sprinkle more sugar on top. Cool in pan, then remove onto serving plate, sugar side up. Decorate with icing sugar and serve with whipped cream if you wish.
