Fresh Corn Waffles with Cilantro Butter

Like no other waffle you have eaten.
Ingredients
- Waffle batter: shopping list
- 1 cup all-purpose flour shopping list
- 1/2 cup yellow corn meal shopping list
- 2 Tablespoons sugar shopping list
- 2 teaspoons double-acting baking powder shopping list
- 1/4 teaspoon salt shopping list
- 1 large egg shopping list
- 2 Tablespoons melted unsalted butter shopping list
- 1/2 cup water shopping list
- 1 cup fresh corn, removed from cob just before adding shopping list
- 1 teaspoon real vanilla extract shopping list
- vegetable oil shopping list
- cilantro butter: shopping list
- 1/4 pound softened sweet butter shopping list
- 1/4 cup fresh cut cilantro shopping list
How to make it
- In a large bowl, mix together flour, corn meal, sugar, baking powder, and salt.
- In a separate large bowl, whip together egg, melted butter, water, corn, and vanilla.
- Add egg mixture to flour mixture and mix until just combined.
- Heat and oil waffle iron, and cook waffle according to manufacturer's specifications.
- Whip cilantro and butter together until smooth and creamy.
- Top each waffle with cilantro butter and serve with real maple syrup.
