Ingredients
- 2 cups flour shopping list
- 1 tablespoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 cup sugar shopping list
- 1/3 cup milk shopping list
- 2 eggs, lightly beaten shopping list
- 1/4 cup key lime juice shopping list
- 1 teaspoon lime zest shopping list
How to make it
- Mix the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. Combine the milk, eggs, oil, lime juice and lime zest in a bowl and mix well. Add to the well in the center of the flour misture and stir just until moistened. Spoon into lightly greased muffin cups, filling 3/4 full.
- Bake at 400 degrees for 28 minutes or until light brown. Remove immediately from the muffin cups.
- *Place the muffin pans on a wet towel for no stick removal*
