Ingredients

2 cups flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup sugar

1/3 cup milk

2 eggs, lightly beaten

1/4 cup Key lime juice

1 teaspoon lime zest

Directions

Mix the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. Combine the milk, eggs, oil, lime juice and lime zest in a bowl and mix well. Add to the well in the center of the flour misture and stir just until moistened. Spoon into lightly greased muffin cups, filling 3/4 full.

Bake at 400 degrees for 28 minutes or until light brown. Remove immediately from the muffin cups.

*Place the muffin pans on a wet towel for no stick removal*
