Hi Sylviahelen! It's so funny, I found your blog the other day when I was wanting to make a quiche with these ingredients, and I made one based on a few different recipes, including yours. Now I wish I'd followed yours more exactly, because I think it would have turned out even better. My method of caramelizing the onions yielded a bit more liquid than I think yours will, and it took a long time to get the custard to set, causing the top of the quiche to be rather brown. I'll follow yours exactly next time and see how it goes. It's an incredible combination of flavors, with the salty tang of the blue cheese, the sweetness of the onions, and the spinach. Wonderful recipe. One question: what do you mean by "butter cream"?

I love this Caramelized Onion Spinach Quiche. I like to caramelize my onions without sugar I do add a dash of Tamari soy sauce it takes a lot longer this way to me it is worth it.
I do like the wine idea and will try that when I make this Quiche.
Thank you for this wonderful recipe.
