This is so devine. Nice, light, refreshing, herby, nutty. Great salad, hope you will try it.

Ingredients
  • Cashew Spinach Salad
  • 1 package washed spinach
  • 1/2 cup cashews unsalted
  • 1 apple peeled and chopped
  • 1/4 cup yellow raisins
  • Dressing:
  • 1/4 cup cider vinegar
  • 1/4 cup oil
  • 1/4 cup sugar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon celery salt

Directions
  1. Combine all dressing ingredients and cook in microwave until sugar dissolves.
  2. Cool completely.
  3. Combine spinach, cashews, apple and raisins.
  4. Pour dressing over spinach mixture and toss well.
