How to make it

  • Combine all dressing ingredients and cook in microwave until sugar dissolves.
  • Cool completely.
  • Combine spinach, cashews, apple and raisins.
  • Pour dressing over spinach mixture and toss well.

    This was a hit for Christmas dinner! I substituted dried cranberries for the raisins - yummy and colorful!
