My beans

- 1 lb pinto beans shopping list
- 1 small onion diced shopping list
- 1 small bunch of cilantro, chopped shopping list
- 4 slices of pepper bacon, chopped shopping list
- 2 cloves of garlic, diced shopping list
- 1 tablespoon chili powder shopping list
- 1 jalepeno shopping list
How to make it
- First wash and sort beans; then in a skillet over low heat cook bacon and onion until the onion is transparent, add chopped cilantro,cook until you begin to smell the cilantro ( 3 minutes max.) Put all of this into a large dutch oven add washed and sorted beans. Add all other seasonings except jalepeno. Cover beans with water. Cook on low heat for one hour stirring occasionally, then add whole jalepeno to top. Cover and cook an additonal hour until beans are soft.
- Note: You will have to add more water during the cooking time

These are just the BEST! Cooked them today, and the flavors just melded....cooking the bacon, onion, then adding the cilantro is the "ticket", not even to mention the whole jalapeno cooked on top of the beans. It reminded me of cooking peas with the...more
