A Japanese steamed cake with sweet pumpkin filling. The perfect thing if you have a bamboo steamer, but if not a regular double-boiler style will do. Makes 10 balls.

Ingredients
  • 1/2 lb kabocha pumpkin or butternut squash
  • 1 1/4 cup sugar
  • pinch of salt
  • 1 tsp cinnamon
  • 1 1/3 cup flour
  • 1/2 tbsp baking powder
  • 1/3 cup sugar
  • 1/4 cup water

Directions
  1. Peel kabocha and cut into small pieces.
  2. Steam until soft, about 25-30 minutes.
  3. Add sugar, salt and cinnamon and mash well.
  4. Mix flour, baking powder, and sugar into a bowl, add water and knead well.
  5. Shape into fairly thin discs.
  6. Put kabocha filling in the center of the dough and wrap it to make a ball.
  7. Place dough balls in the steamer and cook 10 minutes.

I have never had this, but I have seen other recipes for this. You probably know about the baked manju sometimes with white bean, and in Okinawa it is with Purple Sweet Potatoes (yes, I capitalized it, because it is SPECIAL). This recipe of yours looks really good. Can't wait to try it. Keep eating!
