I didn't make it the regular way because I almost never do. I added about three additional cloves of garlic, and only used about a half tablespoon of butter, making up the difference with olive oil. I also only had a yellow pepper. Aesthetically, adding a green or red would have been better. I'd probably go yellow and red with the fish. I also added a couple teaspoons Kosher salt and about a teaspoon ground black pepper to the marinade. More wine, too. I poured some of the marinade into the saute pan toward the end.

I always seem to modify recipes, so note changes below. This comes out really well. Grilled for five minutes on my Weber with lid on, vents fully opened, and fish in one of those basket deals. Served with grilled asparagus marinated in Safeway Lite Italian dressing. Nobody thought it was especially African, but what's African? Everyone enjoyed.
