Ingredients

1Clove garlic,minced

1/4 cup minced parsley

1/8 tsp salt

8oz pk cream cheese softened

1 tsp fresh chopped basil or 1/2 tsp dried(optional)

4 beefsteak tomatoes

1/2 cup all purpose flour

1 egg,beaten with 1 tblsp milk

2/3 cup dry bread crumbs

3 tbsp butter

3 tbsp olive oil

Fresh Basil or Parsley,Optional

Directions

Using a mixer beat together the garlic ,salt ,parsley and cream cheese;add basil,if desired.Cut tomatoes into 12 even slices, about 1/2 ins thick.Spread 6 slices with about 2 tblsp of cream cheese mixture;and top with remaining slices of tomato to make 6 sandwiches.Dip each in flour,then egg mixture and then bread crumbs.Fry on both sides over med heat in a mixture of butter and olive oil until brown.

Garnish with Fresh basil or parsley( optional)
