Layered Mediterranean Pie Recipe
Equally delicious hot or cold, this pie cuts beautifully, revealing the colourful and appetizing layers! (Note, may only serve 4 depending on appetites.)

Ingredients
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 10 oz bag baby spinach
  • 1 envelope pie crust mix or prepared frozen two-crust pie crust or homemade (whatever your energy and skill level dictates)
  • 8 oz thinly sliced (shaved) ham
  • 8 oz mozzarella cheese, sliced very thinly or shredded
  • 1 red pepper, julienned finely
  • 4 eggs, beaten

Directions
  1. Saute onion and garlic in oil until tender. Lightly steam spinach; drain well and stir into onion mixture.
  2. Prepare pastry according to package directions for two-crust pie. Roll out bottom crust and fit into a deep 9" pie plate or quiche pan.
  3. Preheat oven to 400F.
  4. Lay ham slices evenly in pastry. Cover 3ith cheese, spinach mixture and then red pepper slices.
  5. Reserve a little of the beaten egg for brushing pastry top, and pour remainder into pie over other ingredients.
  6. Cover with top crust, decorating with any leftover pastry if desired. Seal edges well and brush with reserved egg. Cut slits into top crust to allow steam to escape.
  7. Bake at 400F for 35 to 40 minutes or until pastry is golden.

Devine.......I can just taste this already....


I'm lazy,going to use a frozen pie shell otherwise this is wonderful!
