How to make it

  • Preheat your oven to 350 degrees
  • Line a cup-cake pan with 12 cup-cake liner papers
  • Grab a bowl and start beating the cream cheese with a mixer. (It'd be easiest if the cream cheese is softened.) Beat the cream cheese until it's fluffy.
  • Add the sugar and vanilla to to the cream cheese.
  • Add eggs one at a time.
  • Place a vanilla wafer, flat side down, into each of the cups.
  • Evenly distribute the cream cheese mixture into the twelve cups.
  • Bake for 20 minutes.
  • Allow to cool, and spoon pie filling of your choice onto top.
  • Enjoy.

    I made these lastnight and they turned out GREAT! They were so fast and easy. I topped mine with blueberry pie filling... then my husband ate them... heheh

    This is a great recipe for potlucks or when you need something quick and easy for company. This recipe has been around for ages. I received this same recipe when in my 20's during the 1970's, which goes to show that it's a classic. Thanks for a great post.
